Pecan bliss balls
These raw pecan bliss balls were once left for me in my letter box in exchange for a bag of pecans. As if that wasn't generous enough, I was also given the recipe. I *love* produce exchange. I also love new season pecans, and I think this makes excellent use of them.
pecan bliss balls
w/ chocolate, coconut and dates
Makes 12- 14 bliss balls - they store well in a glass jar, so why not make a double batch?
Ingredients
1 cup new season pecans
1/4 cup cocoa powder
1/4 cup shredded coconut + 1/4 desiccated coconut for coating
1 cup pitted medjool dates
1.5 tbsp coconut oil
1 tbsp honey
1. Put the dry ingredients into the food processor first - the nuts, cocoa and shredded coconut. Pulse until the nuts and coconut are quite fine and uniform in size.
2. Add the dates, coconut oil, and honey. Pulse until it comes together in the bowl of the food processor.
3. Roll into small bite-sized balls and then coat with the desiccated coconut.
