Homemade coffee liqueur

A delicious treat.
One day I will make this with my home grown coffee and vanilla beans.
Coffee liqueur
Makes 1L
Ingredients
1 cup dark brown sugar
1 cup water
350ml dark rum
400ml strong brewed coffee
1 vanilla bean pod, split
Instructions
Combine dark brown sugar and water in a saucepan, bring to simmer for 5 minutes. Allow to cool.
Combine sugar syrup, coffee and rum.
Sterilise a bottle with boiling water, pour liqueur mix into the bottle and pop in a vanilla bean. Seal and leave for a week or two prior to drinking to allow the flavours to develop.
Stores for a very long time (my batch from 2017 was only finished recently).
Pour over ice to serve.
